- Scoop the avocado into a medium bowl. Season with salt and add the lemon juice. Mash until smooth.
- Spread the avocado on the slice of toast. Lay the chive diagonally across the toast. Put the chopped egg on one side of the chive and the other half egg on the other side. Season with pepper.
