Two Corn Casserole image

Number Of Ingredients 8

1/2 cup margarine
1/4 cup chopped onion
3/4 cup chopped green bell pepper
1 (15-ounce) can whole-kernel corn (undrained)
1 (15-ounce) can cream-style corn
3 eggs, well beaten
1 (8 1/2-ounce) box corn bread and muffin mix
1 cup grated Cheddar cheese (optional)

Steps:

  • Heat oven to 350°. Grease 2-quart casserole. In small skillet, melt margarine. Add onion and pepper. Sauté until crisp. In large bowl, combine 2 corns, eggs, and muffin mix. Blend well. Add onion and pepper. Mix. Pour into casserole and sprinkle with cheese, if desired. Bake at 350° for 55-65 minutes or until firm and set. Let stand 5 minutes before serving.
