TWO CORN CASSEROLE image

Number Of Ingredients 8

1/2 c margarine or butter
3/4 c green pepper, chopped
1/3 c onion, chopped
1 can(s) 7oz cream style corn
1 can(s) 7oz whole kernel corn, not drained
3 eggs, well beaten
1 pkg 8.5 oz corn muffin mix
1 c cheddar cheese, shredded (4oz)

Steps:

  • 1. Preheat oven to 350.
  • 2. In small skillet, melt margarine. Add green pepper and onion. Saute until crisp and tender
  • 3. In large bowl, combine the two corns, eggs, and muffin mix. Blend well.
  • 4. Add onion/pepper mixture .. and mix well. Pour into 2 quart casserole dish. Sprinkle with cheddar cheese.
  • 5. Bake until firm or set (about 55-65 minutes) Let stand 5 minutes before serving.
