TUSCAN WHITE BEANS WITH PASTA image

Number Of Ingredients 7

1 1/2 cups uncooked white beans
1/4 cup olive oil
10 fresh sage leaves, chopped
2 cloves garlic, chopped
1/4 cup chopped celery
1/4 tsp red pepper flakes
8 oz small shaped pasta, cooked and drained

Steps:

  • Soak the beans overnight. Drain, add fresh water and cook until tender. Drain the beans reserving the liquid. Heat the oil over medium heat and cook the garlic and sage for 2 min. Add the celery and pepper flakes and cook 2 min more. Add the beans and salt liberally. Add enough pasta water to make it saucy and add the pasta.
