TUSCAN-STYLE CANNELLINI SALAD image

2 c chopped plum tomatoes
1 Tbls chopped fresh rosemary
1 Tbls chopped fresh parsley
2 Tbls balsamic vinegar
2 tsp olive oil
1-16 oz can cannellini beans, rinsed and drained
3/4 tsp salt, divided
2/4 tsp cracked black pepper, divided

Steps:

  • Combine tomato, rosemary, parsley, vinegar, garlic, oil and beans in a large bowl, stirring well. Sprinkle 1/4 tsp salt and 1/4 tsp pepper over bean mixture; stir to combine.
