TUSCAN RAVIOLI STEW image

Number Of Ingredients 11

Olive oil
1 leek, thinly sliced
3 garlic cloves, minced
1 (14 oz.) can beef broth
3/4 cup water
1/4 tsp. red pepper
5 cups (6 oz.) broccoli, chopped
1 (14 1/2 oz.) can stewed tomatoes, undrained
1 (9 oz.) package refrigerated chicken/cheese filled ravioli
1/2 Tbsp. crushed rosemary
1/4 cup grated asiago cheese

Steps:

  • 1. Heat oil over medium heat. Add leek and garlic; cook for 5 minutes, stirring. Stir in beef broth, water and red pepper. Bring to boil. 2. Stir in broccoli, tomatoes, ravioli, and rosemary. Return to boil; reduce heat, simmer, covered, for 7-8 minutes. 3. Garnish with asigo after ladled into bowls.
