TUSCAN GRILLED TROUT image

Number Of Ingredients 8

8 trout fillets
1/4 cup olive oil
2 cloves garlic sliced thin
1/4 teaspoon dried sage, crumbled
1/4 teaspoon dried rosemary, crumbled
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons wine vinegar (optional)

Steps:

  • 1. Light grill or broiler. Combine oil, garlic, sage, and rosemary in a small saucepan. Cook over moderately low heat until garlic just starts to brown. Remove from heat and stir in the salt (1/4 tsp), pepper, and vinegar (if using) 2. Sprinkle the fish with the remaining 1/4 tsp of salt. Brush on the oil mixture on both sides of the fish. Grill or broil the fish skin side down for 2 minutes. Turn and cook until done, about 2 minutes longer. Serve either without adding more of the oil mixture or with, depending on your taste.
