Steps:
- 1. In a large Dutch oven add the olive oil. Cook the ginger onion and garlic 2 minutes. Add the turmeric, cumin, chipotle powder and coriander. Cook one more minute.
- 2. Add the stock and bring to a simmer. Add the salt taste and adjust to preference. Add the broccoli slaw, bean sprouts, and red bell pepper. Cook 2 minutes.
- 3. Add the lemon juice and cooked rice noodles. Cook 2 more minutes. Add the cilantro and serve
