Turkey Noodle Soup image

I found this recipe in one of the Gifts-in-a-Jar recipe books (Soups). And it was REALLY good! Great for giving away when you hand out leftover Thanksgiving turkey.

SOUP MIX:
3 tablespoon(s) chicken bouillon granules
1 teaspoon(s) pepper
1/2 teaspoon(s) dried whole thyme
1/4 teaspoon(s) celery seeds
1/4 teaspoon(s) garlic powder
1 - 2 - bay leaves
4 cup(s) tri-colored spiral pasta
ADDITIONAL INGREDIENTS:
2 - carrots, diced
2 - stalks of celery, diced
1/4 cup(s) onion, minced
3 cup(s) turkey, cooked and diced

Steps:

  • ***Note - This is a Gifts in a Jar Recipe, so the mix can be made ahead of time and given as a gift, with a tag attached explaining the rest of the process.
  • To prepare the mix: Layer the mix ingredients in the order given into a wide-mouth 1 quart canning jar. Set the bay leaf against the side of the jar before filling with noodles. Attach a gift tag with the cooking directions.
  • To prepare the soup: Place the mix in a large soup pot. Add 12 cups of water. Add the carrots, celery and onion and bring to a boil. Cover, lower heat and simmer for 15 minutes. Discard the bay leaf. Stir in the turkey and simmer an additional 5 minutes.
