Number Of Ingredients 9

4 ounces nitrite-free turkey bacon (such as Applegate Farms)
4 whole wheat Portuguese padinha rolls or other Portuguese rolls or wheat bread
2 tablespoons of guacamole or mashed avocado
3 tablespoons light mayonnaise
1 tablespoon minced shallots
4 thin slices of red onion
8 ounces of deli turkey breast (Applegate makes nitrite-free packs, usually by the bacon in Publix)
1 medium tomato, cut into 8 slices
4 leaves of romaine lettuce (or any other kind of lettuce)

Steps:

  • Cook the turkey bacon according to the package directions. Drain on paper towels. Slice each roll into thirds crosswise or toast bread. Stir together the guacamole or avocado, mayonnaise, and shallots. Spread 2 tablespoons of the guacamole/avocado mixture on the bottom-most slice of each bun. Top each with 1 onion slice, 2 slices of turkey, 2 slices of tomato, 1 slice of bacon, and 1 leaf of lettuce. Top with the middle slice of each roll or piece of toast. Repeat in the same order. To with the topmost slice of roll or toast.
