Steps:
- Preheat oven to 350 degrees. Make the cream sauce: roast, sweat peppers. Clean. Process peppers with tomatoes, 2 3/4 cups ricotta, chicken stock, 1 garlic clove, salt & pepper. Set aside. Blanch the broccoli. In large skillet, combine turkey, onions, red pepper (chopped), one garlic clove, thyme, marjoram, and salt & pepper. Cokk over medium-high heat 5 minutes. Drain. Coll. Stir in broccoli and 1 1/4 cup ricotta. Cook manicotti 6 minutes in boiling water. When cool, stuff with turkey mixture. Brush baking dish with oil. Then cover bottom with a thin layer of sauce. Layer manicotti singly. Cover with sauce. Sprinkle with parmesan. Cover and bake 20 minutes. Uncover, and cook 10 minutes more.
