Tuna / Potato/ Onion Casserole image

This dish was one of my mom's (lets see what we can throw together) recipes. My mom always used sliced raw onion but you can use 2 Tablespoons of minced onions instead. You can use either Garlic powder to taste or 1 fresh Garlic clove, minced. Salt and pepper to taste.

3 tablespoons butter
2 -3 slices raw onions (thick slices)
3 tablespoons flour
1 teaspoon salt
1 teaspoon pepper
2 cups milk
1 (7 ounce) can tuna in water, drained
4 cups quartered potatoes, with skin on
1 garlic clove, minced

Steps:

  • Heat butter in saucepan. Saute sliced onions and garlic about 5 minutes. Then blend in the flour and milk with a whisk, add salt, pepper and stir over medium heat until thickened. Stir in drained tuna. Put quartered potatoes in greased 2 quart casserole dish and stir in tuna mixture. Cover and bake at 350 degrees for 1 hour. Uncover 30 minutes or until potatoes are tender.
