Tortellini Salad image

I got this recipe from a co-worker and made it for the first time today. It is like eating candy!

Number Of Ingredients 10

1 bunch broccoli, fresh cut into bite size pieces
1/4 c golden raisins
1/4 c craisins
1/2 red onion, chopped
1 pkg refrigerator tortellini
2 Tbsp granulated sugar
2 Tbsp apple cider vinegar
1 c mayonnaise
1 lb bacon (or use bacon bits)
1/2 c sunflower seeds

Steps:

  • 1. Cook bacon until crisp. Drain, crumble and set aside.
  • 2. Cook tortellini as directed on package.
  • 3. Blanch broccoli in boiling water just until the color starts to turn and immediately remove from heat and run under cold water.
  • 4. In a salad bowl, toss together broccoli, tortellini, raisins, craisins and red onions.
  • 5. In a small bowl, whisk together the sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.
  • 6. Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.
