TOMATO TART image

Yield 4 Servings

Number Of Ingredients 11

8 to 10 Plum tomatoes, cut into wedges
¼ cup Sugar
¼ cup Red wine vinegar
¼ cup Olive oil
3 sprigs Thyme
2 Bay leaves
1 clove Garlic
Salt and pepper
1 sheet Puff pastry dough
1 Egg
2 tbsp Heavy cream

Steps:

  • Preheat oven to 400°F. Place tomato wedges (cut side up) onto a foil lined cookie sheet and season with salt and pepper. Bake for 30 minutes. In a sauté pan, large enough to hold tomatoes, add sugar and cook over medium low heat. Till amber brown. Making sure to swirl the pan and NOT STIR. Remove pan from the heat and add vinegar. Making sure to be careful of splatter. Stir to dissolve. Remove pan from heat and add olive oil, thyme, bay leaves, garlic clove, and tomatoes. Cook till liquid has thickened, approximately 10 minutes. On a lightly floured surface roll dough to 10-by-12 inch rectangle or approximately doubled in size. With the dull edge if a knife, score the dough to form a boarder and score the center of the dough with a "crisscross" pattern. Spread tomato mixture over the center of the dough. In a bowl stir together egg and cream. Brush the border of the tart with egg and cream mixture and season with salt and pepper. Bake tart in middle of oven for 30 minutes, or until pastry is golden brown. Let rest for 5 minutes before serving.
