TOMATO- GARLIC SOUP image

Number Of Ingredients 14

3 tablesppons olive oil
6 cloves garlic, pressed
1 tablespoon paprika
8 cups tomato puree
2 tablespoons tomato paste
3 cups low fat chicken stock
1/2 cup red wine
2 teaspoons sugar
2 tablespoons tabasco sauce
salt to taste
freshly ground black pepper to taste
Garnish:
1 cup shedded cheddar or jack cheese
1/3 cup coarsely chopped cilantro

Steps:

  • In a large saucepan, heat oil over medium heat. Add the grlic and saute until it just starts to brown; be careful to not burn it. Add the paprika,and stir for 1 minute to release the flavor. Add tomatos, tomato paste and stock; mix well and bring to a simmer for 10 minutes. Add hot sauce and season with salt and pepper. Ladle to soup into warmed bowls and garnish with cheese and cilantro. Serve hot.
