TOMATO AND MINT SALAD WITH POMEGRANATE DRESSING image

1¼ lbs. tomatoes (plum or heirloom), halved, seeded, and cut into ½-inch cubes
1 cup diced seeded fresh mild chile (Anaheim or mild Hatch)
1 cup diced seeded and peeled cucumber
1 cup fresh chopped mint leaves
¾ cup chopped scallion
½ cup chopped toasted walnuts
3 tbsp. chopped fresh Italian parsley
¼ cup pomegranate molasses
2 tbsp. extra-virgin olive oil

Steps:

  • Combine vegetables and herbs in a large bowl. Whisk pomegranate molasses and oil in a small bowl. Season with salt and pepper. Toss with vegetables and herbs.
