TOMATILLO SALSA FOR CANNING image

Number Of Ingredients 9

12 cups tomatillos, chopped
6 cups onions, chopped
12 jalapeno peppers, chopped
12 garlic cloves, chopped
1 cup lemon juice
4 teaspoons cumin
2 tablespoon canning salt
2 teaspoon pepper
1 cup cilantro, chopped

Steps:

  • 1. Combine all ingredients except cilantro in a large pot and stir frequently over high heat until mixture boils. 2. Reduce heat to medium-low and simmer 20 minutes. 4. Add cilantro in the last 5 minutes. 5. Ladle into pint jars leaving 1/2 inch head space. 6. Adjust lids, process in a hot water bath for 20 minutes.
