TOFU WITH GROUND PORK image

Number Of Ingredients 14

1 block firm or extra firm tofu
salt & pepper
1 T cooking oil (e.g., canola)
1.5 c sliced mushrooms
1 lb ground pork (or turkey or beef or chicken)
1 clove garlic, thinly sliced
1 t grated fresh ginger
1 c chicken broth
3 T combo of soy sauce, sesame oil and sriricha
IF you want to thicken sauce:
.25 cool water
1 t cornstarch
4 sliced green onions
Rice or rice noodles

Steps:

  • Wrap tofu in paper towels and put heavy object on top of tofu to force out water. Let sit for 10 minutes. Cut tofu block lengthwise in half, and then each half into six pieces. Salt and pepper each side of each piece. Heat large skillet over medium high heat. When hot, swirl in cooking oil. Add tofu carefully to avoid being spattered by oil. Brown tofu by frying on each side about 2 minutes. Remove from skillet and place into large bowl. Add mushrooms to skillet and brown. (May need to add more oil.) Remove to same bowl. Break up ground pork and sauté until browned (about 4 minutes). Add garlic and ginger and sauté 1 minute until aromatic. Add tofu and mushrooms back into skillet. Add chicken broth and soy sauce combo. If thickening sauce, whisk cornstarch into water and pour into skillet. Lower heat and let simmer for 5 minutes. Serve over rice or rice noodles and top with sliced green onion.
