TOFU HEALTHY BROWNIES image

1/2 c. butter melted
3/4 c. tofu (soft)
1 c. sugar
1/2 c. unsweetened applesauce
3 eggs
1 1/2 tsp. vanilla extract
1/3 c. whole wheat flour
1/2 c. (scant) all purpose flour
1/2 c. cocoa
1/4 c. bran
2 tbsp. wheat germ
1/2 tsp. baking powder
1/2 tsp. salt

Steps:

  • Heat oven to 350. Grease an 8 inch pan with butter. Sift flours with cocoa, salt & baking powder. Stir in wheat germ and bran Place tofu in blender and blend till smooth Melt butter in microwave till just melted (not too hot) and add to blender. Pulse with the tofu Add the sugar and applesauce. Blend till very smooth. Add the eggs and blend just till mixed Stir dry and wet ingredients just till blended and pour into pan. Bake for 40 - 45 minutes till done Serve warm with vanilla icecream
