MUSTARD-ROASTED CHICKEN image

1 c dijon mustard
1/4 c olive oil
1/4 c chopped italian parsley
2 T thyme
16 crushed garlic cloves
2 4-lb chickens, rinsed and patted dry
6 fresh rosemary sprigs
6 fresh sage sprigs

Steps:

  • Whisk first 5 ingredients. Spread inside cavities and over outsides of chickens. Cover and refrigerate at least 4 hours. Let chickens stand at room temperature for 30 minutes. Sprinkle generously with salt and pepper inside and out. Let stand 30 minutes longer. Place chickens on rack in roasting pan. Cover with accumulated marinade and top with rosemary and sage. Roast at 400 about 1 hour 10 minutes or until done.
