Tina's Cream of Mirliton and Shrimp Soup image

My sister's friend's mother lived in New Orleans. She agreed to meet us and give us a personal tour of New Orleans right after she got off the local PBS station where she was making this soup as part of a fund raiser. It is as warm and delightful as her Southern Hospitality.

3 lb mirliton
1 medium onion minced
1 stick butter
1/4 tsp cayenne pepper
4 clove garlic divided
1 lb small shrimp peeled and deveined
1 1/2 c half & half
salt and pepper

Steps:

  • 1. Steam mirliton until tender, peel and scrape flesh off pit. Puree until smooth. Reserve
  • 2. Sauté onion in butter until translucent. Add 3 cloves of minced garlic. Sauté a few more minutes
  • 3. Add shrimp to onion, sauté 3 minutes. Add 1 minced garlic clove and sauté 1 minute. Add mirliton and Half & Half. Adjust seasonings. Heat until hot. Garnish with minced chives if desired.
