Tilapia with Tomato-Orange Relish image

Number Of Ingredients 10

6 - tilapia fillets (6 oz. each)
3 tablespoon(s) butter, melted
1/2 teaspoon(s) salt, divided
1/2 teaspoon(s) lemon pepper
1 medium tomato, seeded & chopped
1 medium orange, peeled, sectioned & chopped
1/3 cup(s) red onion, finely chopped
1 tablespoon(s) capers (optional - i don't use them)
1 1/2 tablespoon(s) brown sugar, firmly packed
1 tablespoon(s) red wine vinegar

Steps:

  • Preheat oven to 425 degrees F.
  • Place fish in a greased 15" x 10" x 1" baking pan. drizzle with butter; sprinkle with 1/4 tsp salt & the lemon pepper. Bake for 10 minutes or until fish flakes easily with a fork.
  • In a small bowl, combine tomato, orange, capers (if using), brown sugar, vinegar & remaining salt. Serve on top of fish.
