Steps:
- 1. Preheat oven to 350 degrees
- 2. Mix together all ingredients up to tomato juice. Mix with your hands and "fluff" the meat, rather than compressing it. Mold the meat into a bomb-shaped loaf.
- 3. Make the loaf 8-10 inches long, 4 inches high in a shallow casserole dish.
- 4. Cover the top with tomato sauce.
- 5. Place bacon strips over the sauce.
- 6. Bake for 1 hour and 15 minutes. Let rest 10 minutes before slicing. Enjoy.
