A twist on using up that leftover Turkey from Thanksgiving. A Hearty meal to stick to the ribs in the cold weather. Which is a must in Northern Michigan. Hope you enjoy it as much as my Hub-bub and Friends do.

Steps:
- Preheat oven to 350^. Spray a 1 qt. baking dish with non stick cooking spray. Place mashed potatoes in bottom of the pan, mashing down and around to fill the bottom of the pan.
- In a skillet, sate celery and onion in 2T. butter until tender. Transfer to a large bowl. Stir in the cornbread, bread cubes, 2T. broth and seasonings. Put in baking dish on top of potatoes.
- For Gravy: In a large saucepan melt 1/4c. butter. Whisk in flour and salt until smooth. Gradually add broth and milk. Bring to a boil. Reduce heat cook and stir for 2 minutes. Remove from heat. Take a small amount of hot mixture into a bowl and beat with an egg, pour into saucepan, stirring constantly. Bring to a gentle boil. Cook and stir 2 minutes longer.
- Spoon half of the gravy mixture over dressing mixture. Layer with Turkey and remaining gravy. Sprinkle with bread crumbs. Cover and bake 30 min.
