THAI CURRY PASTE image

Number Of Ingredients 10

3 stalks lemongrass (white parts only), thinly sliced
1 tbsp. thinly sliced, peeled galanga
1 small shallot, peeled and thinly sliced
1/2-inch piece fresh turmeric, peeled and thinly sliced
2 cloves garlic, peeled and thinly sliced
1 3/4 oz. Thai chiles (red or green)
1 tbsp. grated lime rind (preferably kaffir)
1 piece cilantro root (root of one stalk, or 5-6 stems)
1 tsp. ground green peppercorn
1 tbsp. shrimp paste

Steps:

  • Using a mortar and pestle, grind ingredients gradually, starting with lemongrass and adding ingredients one at a time. Grind to a fine paste.
