Texas Roadhouse Rattlesnake Bites image

Texas Roadhouse Rattlesnake Bites are a popular and delicious appetizer served at the Texas Roadhouse restaurants in Texas. They're usually served hot with Ranch Dressing and Cajun Horseradish Sauce for dipping.

2 1/2 c shredded montery jack cheese
1 c chopped fresh jalapeno
1 c chopped pickled jalapenos
1 c chopped red or green bell pepper
1/2 c buttermilk (regular milk works ok, too)
1 1/2 c bread crumbs (plain or seasoned)
1 1/2 c buttermilk
vegetable oil, for frying
1 scoop(s) ranch dressing, for dipping
1 scoop(s) cajun horseradish sauce, for dipping (optional)

Steps:

  • 1. In a shallow bowl, mix well cheese, jalapenos, bell peppers and 1/2 cup buttermilk. Roll into a firm "golf ball-sized" balls.
  • 2. Place bites in covered bowl and let set for 30 to 45 minutes in the freezer.
  • 3. Take the balls out of the freezer and dip in buttermilk, then roll around in breadcrumbs. You can do this in advance and place them in the freezer until you are ready to fry them.
  • 4. Heat oil in a deep-fryer or deep pan with high sides. Fry Rattlesnake Bites in hot oil until golden brown, about 3-4 minutes.
