Texas Caviar - Gluten Free image

This is a family favorite Appetizer. You can adjust the "heat" by using more or less jalapeno pepper. Serve with gluten free corn chips.

1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans
1 (12 ounce) can shoe peg corn
1 bunch green onion
2 fresh jalapeno peppers
4 roma tomatoes
1 bunch fresh cilantro
2 garlic cloves
gluten free Italian dressing

Steps:

  • Rinse peas, beans, corn.
  • Chop onions (including white part), jalapenos, tomatoes and cilantro.
  • Crush garlic.
  • Add all vegetable ingredients and add dressing to taste.
