Number Of Ingredients 9

1 can(s) 15 ounces black-eyed peas, rinsed and drained
1/4 cup(s) thinly sliced green onions, about two
1/4 cup(s) finely chopped red sweet pepper
2 tablespoon(s) cooking oil
2 tablespoon(s) cider vinegar
1 to 2 - fresh jalapeno peppers, seeded and chopped
1/4 teaspoon(s) cracked black pepper
dash - salt
2 clove(s) garlic, minced

Steps:

  • In a bowl, combine the black-eyed peas, green onions, red pepper, oil, vinegar, jalapeno pepper, salt, pepper and garlic.
  • Cover and chill overnight. Serve the mixture with crackers or tortilla chips.
