I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Number Of Ingredients 10

1 can(s) white shoepeg corn
1 can(s) black-eyed peas
1 can(s) black beans
4 ounce(s) chopped pimento
4 ounce(s) chopped jalapeño or mild green chiles
1 cup(s) diced celery
1 - red onion, diced
1 cup(s) vegetable broth
1/2 cup(s) apple cider vinegar
- salt and pepper to taste

Steps:

  • Drain & rinse canned vegetables
  • Mix with rest of vegetables
  • Mix vegetable broth and vinegar. Pour over vegetables. Stir well.
  • Mix well & marinate overnight
  • Drain marinade & serve with scoopable chips
