Steps:
- Place presoaked beans in a pot with 2 1/2qts. water, the ham shanks bay leaves, 4t. cumin,2T. chili powder,the cayenne and the cloves. Cover partially and simmer 1 hr. uncover and continue to simmer 1 hr. adding more water if too dry. cook bacon in skillet until crisp, transfer to paper towel until cool and then crumble into small bits. Remove all but 2T. bacon fat from skillet add onion, garlic 2t. cumin and 1T. chili powder. Saute until onion is tender, add tomatoes and cook additional 3 minutes. Add onion mixture to beans, stirring well and continue to simmer about 30 minutes until beans are tender. Remove shanks from beans and cut meat off bones into small pieces and return to pot along with the crumbled bacon stirring well. Season to taste with salt and black pepper.
