1/2 tablespoon oil
1/2 onion, small, chopped
4 ounces mushrooms, fresh and sliced
1/2 lb ground beef
1 (16 ounce) can corn, drained
1 (10 ounce) can cream of celery soup
1/2 cup 1% low-fat milk
1 1/2 tablespoons brown gravy mix (Brown Gravy Mix)
1 1/2 cups colby-monterey jack cheese, shredded
1/4 teaspoon garlic salt
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
0.5 (24 ounce) bag tater tots
1/2 cup French fried onion rings

Steps:

  • Preheat oven, 400 deg.
  • In a large skillet, heat oil. Add chopped onion, mushrooms and saute for 10 min until soft.
  • In a 2 quart casserole, line bottom and edges with tater tots. Bake at 400 deg. for 10 minutes.
  • Add ground beef to skillet with onion and mushrooms and brown. Remove from heat and add drained corn.
  • Meanwhile in a med. bowl, mix soup, 1 Cup cheese, milk, and spices.
  • Take casserole out of the oven, add beef, onion, mushroom and corn mixture into the center.
  • Pour soup mixture over the top of the beef.
  • Bake covered for 20 minutes.
  • Remove cover and add the remaining cheese and French fried onions.
  • Put back into the oven until cheese is melted approximately 5 minutes.
  • Remove from oven and serve.
