Tasty Beef - N - Rice Skillet image

It is just my son and I tonight...love cooking for him, he'll eat anything if it don't eat him first...lol, although he's not always been that easy to please...he loves this one skillet meal...asked me to make it tonight, you could add a can of corn too...I have also added corn chips...make it your own!! :) My photos

Number Of Ingredients 16

1 1/2 - 2 c uncooked minute rice, prepared according to box directions
1 lb ground beef
1 medium onion, chopped
3 clove garlic, minced
1 c beef broth
1/2 tsp beef bouillon paste - optional
1 c tomato sauce or chopped tomatoes in juice
2 1/2 Tbsp chili powder
1 1/2 tsp cumin
1 1/2 tsp salt
1/2 tsp pepper
1 - 15 oz can ranch style pinto beans
1 - 4 oz can green chiles
1 can(s) corn, drained - optional
1 c shredded pepper jack cheese - or cheddar
toppings - sour cream, corn chips,chopped green onion - optional

Steps:

  • 1. Cook rice according to package directions.
  • 2. Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.
  • 3. Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin, chiles, corn and pepper; heat through. This pic is missing the rice...oops!
  • 4. Sprinkle with cheese, cover and cook until cheese is melted - sometimes I set under broiler. I leave this set for 5 minutes to thicken up.
  • 5. Serve by itself or with your favorite toppings.
