Tart Cherry Salsa image

Yield One cup

Number Of Ingredients 7

1 1/3 cups frozen unsweetened tart cherries
1/4 cup dried tart cherries, coarsely chopped
1/4 cup red onion, finely chopped
1 tablespoon jalapeño pepper, finely chopped
1 clove garlic, finely chopped
1 tablespoon fresh cilantro, chopped, or 1/2 t. dried cilantro
1 teaspoon cornstarch

Steps:

  • Let cherries thaw; drain, reserving one tablespoon cherry juice. Chop cherries and combine with onion, jalapeño, garlic and cilantro in a medium saucepan; mix well. Combine reserved cherry juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over medium heat until mixture is thickened; cool. Keep refrigerated. Tip: Tuck small jars of salsa (and the recipe) inside the pockets of a flowery vintage apron...what a sweet gift!
