TANGY TOMATILLO-AVOCADO SALSA image

MY SISTER GAVE ME THIS RECIPE A FEW MONTHS AGO. FORGOT THAT I HAD IT.

Number Of Ingredients 8

6 - fresh tomatillos, husked, & halved
1 cup(s) water
1 - ripe avocado, halved, seeded & peeled
1/2 cup(s) loosely packed fresh cilantro leaves
1/3 cup(s) sour cream
1 - jalapeno, seeded, & coarsely chopped
1/2 teaspoon(s) salt
1 cup(s) coarsely chopped green onions

Steps:

  • IN MEDIUM PAN, COMBINE TOMATILLOS & WATER. BRING TO A BOIL, REDUCE HEAT. SIMMER, UNCOVERED FOR 5-7 MINS. OR UNTIL TENDER, STIRRING OCCASIONALLY.
  • USING SLOTTED SPOON, TRANSFER TOMATILLOS TO FOOD PROCESSOR OR BLENDER, COOL SLIGHTLY. ADD 2 T. OF THE LIQUID.
  • ADD AVOCADO, GREEN ONIONS, CILANTRO, SOUR CREAM, JALAPENO, & SALT TO BLENDER OR FOOD PROCESSOR. COVER & PROCESS UNTIL SLIGHTLY CHUNKY. TRANSFER TO COVERED CONTAINER, CHILL FOR 1-24 HRS. CAN SERVE WITH GRILLED MEAT OR POULTRY.
