Steps:
- Bring 2 cups water to a boil and add the pulp.
- Reduce to a simmer and cook for about 15-20 minutes.
- Allow to cool if you are removing seeds. You can either leaves in seeds or remove them.
- If not removing seeds, add another cup of water and return to a boil.
- Add all other ingredients, except lime juice, and after it comes to a boil, reduce to a simmer and allow to cook for another 20 minutes.
- At this point, all the flavors should have combined. Using a hand blender puree sauce. Add more water to bring to the desired consistency.
- Taste for seasoning. Add lime juice and salt or sugar accordingly.
- Tamarind chutney is supposed to be the perfect balance between tart, sweet and spicy.
- Freeze and use as needed with Pholourie.
