I am not going to get into a debate over MSG. The characteristic flavor ("unami") of Japanese mayonnaise comes from the addition of MSG. In addition, Japanese mayonnaise is made with egg yolk only. You can get a reasonable reproduction of Japanese mayonnaise by adding about a teaspoon of soy sauce (which also contains MSG), miso, malt vinegar, Chinese black vinegar or Worcestershire sauce to regular mayonnaise. 4 slice(s) sandwich bread (crusts trimmed if desired)
2 - hardboiled eggs
3 tablespoon(s) japanese mayonnaise (kewpie™, for ex.)
1/2-1 teaspoon(s) soy sauce or substitute (read recipe introduction)
- cracked black pepper, to taste

Steps:

  • Peel the hardboiled eggs.
  • Transfer eggs to a prep bowl and mash. Add the mayonnaise, (soy sauce or substitute if using) and cracked pepper. Mix well.
  • Spread the mixture onto two slices of bread. Top with other bread slice.
  • Slice sandwiches into 3 equal rectangle shapes.
