Taco Soup image

This is a very good soup and so easy to make. I always make up a big batch and then freeze the left overs for a future dinner.

Number Of Ingredients 21

1 lb lean hamburger
1 large onion ; chopped
4 c water
1 (10oz) can(s) enchilada sauce
1 (15oz) can(s) tomato sauce
2 (10oz) can(s) tomatoes with green chili's
1 (10.75oz can(s) tomato soup
1 (15oz) can(s) red kidney beans ; drained
1 (15oz) can(s) pinto beans
1 (15oz) can(s) black beans
1 can(s) corn niblets
1 can(s) sliced black olives
1 small can jalapenos , optional
1 pkg taco seasoning mix
salt and pepper
1 tsp chopped garlic(from a jar)
1 tsp parsely flakes
GARNISH
sour cream
shredded cheddar cheese
frito's corn chips

Steps:

  • 1. In a large dutch oven or pot ; cook hamburger and chopped onion until browned , drain off grease.
  • 2. Add all the remaining ingredients except garnish items ; Mix all together.
  • 3. Bring to a boil ; reduce the heat to low and simmer for at least 1 hour.
  • 4. Serve in individual bowls and add sour cream , cheese and broken up corn chips . mix and enjoy !
