Swiss Chicken image

My mother used to make this all the time, I don't know where she came up with the name but it sure was delicious. The original recipe is called "Swiss Steak" but to make it more leaner I fix it with chicken breasts instead, hence the name "Swiss Chicken".

4 slice chicken breast
1 c celery
1 c carrot, sliced
1 medium onions, yellow, medium
1 can(s) tomatoes, canned italian style with juice
1 c all purpose flour
1 1/2 c water to cover

Steps:

  • 1. Wash and slice Celery, and carrots. Slice onion, either chop or slice for ringlets whichever you prefer. Set aside. Preheat oven to 350'.
  • 2. Heat a frying pan and add oil for frying chicken. In a separate dish add flour,salt and pepper to roll chicken in. Add chicken to pan and fry until brown on both sides.
  • 3. Place cooked chicken in baking dish and add celery,carrots, and tomatoes on top of chicken. Add water and a little flour to thicken. Cover and cook for 45 minutes. After 45 minutes, check and if it's done, uncover for 10 minutes to brown. Make sure chicken is cooked through. Serves 4.
