SWISS CHARD WITH CRANBERRY DIJON VINAIGRETTE image

Number Of Ingredients 11

1 bunch swiss chard, chopped with stems removed.
1 handful walnuts, chopped
2 stalks celery, chopped
1/2 cup grapes, sliced
crumbled feta, 1 handful or to taste as you desire
Dressing:
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon leftover cranberry sauce
1-2 teaspoons dijon mustard
salt and pepper to taste

Steps:

  • Chop vegetables and add to medium size bowl. To prepare dressing, whisk ingredients together and puree in a blender or food processor until smooth. Toss dressing with salad and mix together.
