SWEET POTATOES WITH PECAN AND MARSHMALLOW STREUSEL image

2 large can yams
1 large can unsweetened pineapple slices
1 1/2 c (3 sticks) butter, at room temperature
1 1/2 c light brown sugar
1 1/2 c all-purpose flour
1/2 tsp ground cinnamon
1/2 tsp salt
2 c toasted pecan pieces
2 c miniature marshmallows

Steps:

  • Preheat the oven to 400 degrees F. 1) combine the butter, brown sugar, and flour together (it will look crumbly and lumpy). fold in the cinnamon, salt, pecans and marshmallows. 2) Drain yams. Drain pineapple reserving 1/4 c liquid. Line bowl with pineaple slices. Put yams in bowl. 3) cover the potatoes with the streusel and return to the oven for 20-30 minutes until the streusel is bubbly and golden. Top with minimarshmallows
