Steps:
- Preheat oven to 375. Spray or oil baking pan or casserole dish with oil and set aside. Place parsnips, sweet potato and apples in large bowl. In microwave safe bowl, mix oil and honey. Warm in microwave about 10 seconds. Mix in soy sauce. Pour over vegetables & apples and toss to coat well. Transfer mixture to baking pan and cover with foil. Bake until tender, about 1 hour, stirring occasionally. Add salt & pepper to taste.
