Sweet Potato Pie image

Number Of Ingredients 11

3 large eggs
1 1/4 cups sugar
Dash of salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
Juice of 1 lemon (optional)
1 teaspoon vanilla (optional)
1 cup heavy cream
3 cups cooked, mashed sweet potatoes
2 unbaked 8- or 9-inch pie shells

Steps:

  • Preheat oven to 350 degrees. Beat eggs well.
  • Add sugar, salt, spices and, if desired, lemon juice and vanilla. Mix thoroughly.
  • Add cream, and stir.
  • Add mashed sweet potatoes, and mix thoroughly.
  • Turn into pie shells, and bake for 1 hour or until firm.
