Sweet Heat Barbecue Sauce image

I found this recipe a while ago. Originally, it used jalapenos or red chili peppers. I tried it again with chipotle peppers. That's the ticket. You can try many variations on this sauce: - Use honey or molasses in place of the brown sugar - Try different type of vinegar - Use more or less chipotles for a different heat level - Try replacing half the onion with diced sweet red peppers You can store the excess sauce for several weeks in the refrigerator or freeze for later use. Number Of Ingredients 12

2 - onions, large white
6 clove(s) garlic, minced
6 - chipotle peppers with adobo sauce
1 cup(s) tomato ketchup
1/2 cup(s) brewed coffee. strong
1/4 cup(s) worcestershire sauce
2 tablespoon(s) lemon juice
1/4 cup(s) apple cider vinegar
1/3 cup(s) brown sugar, packed
2 teaspoon(s) kosher salt
1 tablespoon(s) dijon mustard
1/4 teaspoon(s) cayenne pepper (or to taste - careful! heat can overwhelm)

Steps:

  • Heat 2 tablespoons of oil in a saucepan over medium-high heat
  • Saute the onion and garlic until translucent, about 3-6 minutes
  • Place all remaining ingredients into a saucepan and simmer gently for 20-30 minutes
  • Place in a blender or using an immersion blender (boat motor) and blend the sauce until smooth
  • Continue simmering until it is the consistency you desire, about another 5-15.
