Steps:
- Preheat oven to 375.
- Mix the cornmeal, flour, sugar, baking powder, cinnamon, coconut and salt together with a wire whisk.
- Mix the coconut milk, eggs and extract together with a wire whisk.
- Mix the two groups together with a wooden spoon. Pour into greased 9x5 loaf pan and bake for 35 to 40 minutes.
