Sweet Coconut Corn Bread image

Number Of Ingredients 10

1 cup yellow corn meal
1 cup all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon cinnamon
1 cup shredded coconut
1/2 teaspoon salt
1 cup coconut milk
2 eggs, beaten
1 teaspoon coconut extract

Steps:

  • Preheat oven to 375.
  • Mix the cornmeal, flour, sugar, baking powder, cinnamon, coconut and salt together with a wire whisk.
  • Mix the coconut milk, eggs and extract together with a wire whisk.
  • Mix the two groups together with a wooden spoon. Pour into greased 9x5 loaf pan and bake for 35 to 40 minutes.
