Sweet Butternut Squash image

I created this because what I really wanted was candied sweet potatoes. Since I didn't have any, but a lot of butternut squash I improvised. This turned out so much better than expected! I nearly ate it all before I could snap a pic!

Number Of Ingredients 7

1 sm butternut squash, peeled, seeded, and cut into small cubes (about 2 1/2 cups of cubes)
1 Tbsp butter
2 Tbsp brown sugar
1 Tbsp honey
1/2 tsp cinnamon
freshly grated nutmeg, to taste
sea salt, to taste

Steps:

  • 1. In a large skillet with a tight fitting lid, melt butter over medium-low heat.
  • 2. Add rest of ingredients and stir well. Cover and cook 15 minutes or until squash is tender.
  • 3. Remove lid, increase temperature to medium to medium-high heat, and let cook for 5 minutes or until juices have thickened quite a bit. To the consistency of a thin syrup.
  • 4. Remove from heat and serve. Enjoy!
