Steps:
- 1. In a small bowl,combine 1/2 cup melted margarine,3/4 cup dark brown sugar and 1 tablespoon pumpkin pie spice;whisk well.
- 2. Brush the mixture into a pie crust.Sprinkle 1 cup chopped sweet and crunchy peanuts all over the crust. Cover with plastic wrap and refrigerated for 3 hours.
- 3. Preheat oven to 350 degrees F.Place sweet potatoes in an aluminum foil-lined baking sheet.
- 4. Bake in preheated oven until the potatoes are easily pierced with a fork skin loosens,35 to 40 minutes.Allow potatoes to cool.
- 5. Peel the potatoes and place them in a large bowl and mash them with a potato masher.
- 6. Beat milk,liquid creamer,egg whites,cream cheese,coconut extract and remaining melted margarine,brown sugar and pumpkin pie spice into mashed sweet potatoes with an electric mixer until fluffy,about 5 minutes.
- 7. Stir in crushed pretzels and remaining chopped sweet and crunchy peanuts.
- 8. Pour sweet potato mixture into a prepared pie crust.
- 9. Bake in preheated oven for 40 to 45 minutes or until the pie is set and the crust is browned.
