GUINNESS CORNED BEEF image

Number Of Ingredients 16

1/2 onion, chopped
3 carrots, chopped
2 celery stalks, chopped
3/4 cups brown sugar
1/4 cup tomato paste
1 Tablespoon dill weed
1- 14 ounce can beef broth
1 tablespoon pickling spice
6 peppercorns1 corned beef brisket, about 3 pounds
1 bottle/can Guiness stout
1-2 cups water
1 pound petite potatoes, golden or red, cut in half
1/4 cup chopped parsley
Good olive oil
Salt, to taste
Pepper, to taste

Steps:

  • Place chopped vegetables in bottom of crock pot. Mix tomato paste, brown sugar, pickling spice, dill, peppercorns,k and beef broth. Pour over vegetables. Dd corned beef to slow cooker. Pour Guiness over the beef. Top off with water until crock pot is no more than 75% full. Cook on low gor 8 hours. In the last 40 minutes to hour of cooking, turn crockpot to high and add the potatoes. Cook until time is up. Remove potatoes from crockpot and dress with olive oil, parsley, salt and pepper and serve alongside corned beef. Slice corned beef across the grain and serve as desired.
