SWEDISH PANCAKE WITH SALT PORK image

1/2 lb. Salt pork
3 lg. eggs
2 cp. whole milk
1 cp. flour
1/3/ cp. sugar
1/2 tsp. salt

Steps:

  • Cut salt pork into 1/2" cubes, blanch in boiling water for a min. and drain. saute in a heavy pan until brown and crispy. Pour fat and salt pork into a 9"x13" glass pan. Whisk all other ingredients until incorpporated. This should be done earlier and set aside for an hour. Pour wet mixture over the salt pork and put into a preheated 400 degree oven. Bake approx. 35 to 45 min. till golden brown and puffed.
