SWEDISH MEATBALL SAUCE
1 can(s) cream of mushroom soup
1 1/4 c sour cream
2 Tbsp red wine, what u do w/the rest of the bottle is up to u
1 1/2 tsp parsley flakes
1/4 tsp oregano, dried
1/2 tsp garlic powder
1 Tbsp caraway seeds
MEATBALLS
2 lg celery stalks with leaves abt 2/3c
1 med onion abt 2/3 c
1 tsp parsley flakes dried
1 lb ground beef
1 lb ground pork
1 tsp salt
1/2 tsp pepper ground
1 tsp worcestershire sauce
1/2 c fine bread crumbs(i lightly toast 2 slices of bread and put through the food processor
1 egg

Steps:

  • 1. blend all sauce ingredients in a 2 quart saucepan and simmer on low 30 minutes or longer stirring occasionally
  • 2. chop or process celery and onion to a fine mince. add to remaining meatball ingredients and mix well. I pick up the whole wad of meat and slam it back down into the bowl a few times to compact everything and keep my meatballs from falling apart
  • 3. form meatballs to desired size (a 2T ice cream scoop makes short work of it) place on ungreased cookie sheet and bake at 350 degrees till slightly browned 30 to 45 min depending on size
  • 4. remove meatballs with spatula or slotted spoon to crockpot or covered baking dish.
  • 5. toss gently with prepared sauce and bake or crockpot on low at least 30 minutes stirring occasionaly
