Surprisingly good quinoa biscuits image

Number Of Ingredients 9

2 cups quinoa flour
1 teaspoon baking soda (bi-carb soda)
1/4 teaspoon salt
250 grams butter (or nuttelex) - melted and cooled
1 1/4 cups brown sugar
1 egg
1 egg yolk
2 teaspoons vanilla essence
1 tablespoon coarse sea salt

Steps:

  • Preheat oven to 150 degrees C
  • Place flour in large frypan over low heat. Stir regularly to toast the quinoa for 5-10 minutes then remove from heat. Sprinkle over baking soda and 1/4 teaspoon of salt and stir through, making sure there are no lumps of baking soda.
  • In a large bowl, beat together the melted butter and brown sugar until well mixed. Add eggs and vanilla and beat until creamy and a lighter colour.
  • Add in flour and mix until just combined.
  • Roll dough into walnut sized balls and place on lined baking tray leaving 5cm between each biscuit.
  • sprinkle with coarse sea salt - just a few grains or flakes per cookie. (You won't need all of the tablespoon)
  • Cook for 10 minutes in top half of oven.
  • Remove from oven and let cool for at least 5 minutes before moving to a wire rack.
